BANANA SCONES RECIPE

An egg free  Banana Scones made with regular pantry items and really easy to make.

I have 2 bananas lying on my kitchen counter and need to do something before it turns bad.

After so long, I did not make any scone so  this Banana Scones  are the best option.

The dough was bit sticky but still  manageable.  Am able to shape it into 7 in round onto floured baking pan with my hand.  Place the dough in the middle of the pan, pat on top and run your hand along the edges to give it a nice round shape to the thickness of 3/4 in.

My Banana Scones take exactly  20 minutes to bake but it may vary depending type of oven you are using, so adjust accordingly.

DORAYAKI RECIPE

Dorayaki is a popular Japanese pancake sandwich with sweet red bean paste,  eaten for breakfast, as a dessert or snack.

This pancake uses least liquid but more eggs to get those super soft texture.  I rest my batter for 30 minutes  before frying.

The original dorayaki is  sandwiched with red bean paste but I don't have them at the moment so replace it with chocolate and some with  peanut butter and jelly.

Since the batter contains sugar and honey, it tends to brown faster.   so you need to watch first few  carefully  and adjust the heat accordingly.

The fluffy and fragrant  little  Dorayaki   turned out so cute and DELICIOUS.   Am going to try next with other fillings such as blueberries, coconut jam (kaya), strawberries and many more.

MUTABBAQ (MURTABAK) RECIPE

Mutabbaq is a stuffed flat bread originating from Saudi Arabia.  It is now popular in   Malaysia, Singapore, Brunei, Thailand, Indonesia and India,  The name and ingredients may significantly vary from one country to another.

My Mutabbaq Recipe was stuffed with tuna,  It could be filled with your choice of fillings.  Be it sweet or savory.  It can be enjoyed anytime of the day,  You could use  minced meat or  turns it meatless if you are vegetarian.

When adding liquid or milk to the flour, add in little by little until you get a  soft dough.  Add more milk if needed because it depends on type of flour you use.

When rolling out the Mutabbaq on dusted surface,  make sure it is really thin to ensure  fully cooked  bread and proper balance of dough and filling.

I used my non stick pan to fry these mutabbaq and much less oil but you could use cast iron pan if you have.

THE BEST SWEET YEAST ROLLS RECIPE

A slightly different way to make a fluffy rolls.  Am curious to know how The Best Sweet Yeast Rolls turned  out after watching a video by Today Food-Tasty..

It starts by mixing flour. sugar. warm milk and melted butter in a mixing bowl.  No kneading at this stage, cover and let rise for 60 minutes.

After the dough has risen, add baking powder, salt and additional flour little by little. Stir the dough together with your rubber spatula or wooden spoon. The dough is super sticky. Roll out on heavily floured surface into a rectangle, apply butter and sprinkle with brown sugar (I used orange colored one).   Equally cut into 10 slices.  Roll each into a ball and place onto a greased baking pan.

Original recipe is called Homemade Cinnamon Rolls but  I  change my mind and shape them into a round ball.

The Best Sweet Yeast Rolls turned out PERFECT,  rose beautifully. Amazing taste, worth all my effort.

A fluffy Milk  Bread Rolls that are  a treat for your breakfast or in between snack,

Another project on yeast bread, I made these Milk Bread Rolls that was slightly differ from my regular method.

Normally used instant yeast, added directly to the flour but this time, dissolved it in water together with sugar, the same way you did with active dry yeast.

If you intend to make use of active dry yeast,   add  a quarter teaspoon more =  1 1/4 teaspoons.

Kneading is another vital part of making bread if kneading by hand, you have to do it for at least 8-10 minutes until it is elastic and smooth.

Am so glad these Milk Bread Rolls turned out great, I love to dunk it in my coffee.

CHEESY QUICK BREAD RECIPE

This mix and bake Cheesy Quick Bread was a nice change from a regular sweet treats I have baked.

Am a fan of quick and easy bread that can be whipped up for less than an hour.  Never used cheese in quick bread so this is my first trial.

Most of the recipe called for cheddar or other sharp tasting cheese but I only have cream cheese so make use of that. Only added half the amount of cheese required.

Since this is a savory bread, added only a tablespoon of sugar.  You may add more for a sweeter version.

This Cheesy Quick Bread turned out great, my kids loved it and the best part it is super easy to make.

MINI ONION SAMOSA RECIPE

A favorite in our household, these savory bites are filled with curried onion and shallow fried.

I have made this Mini Samosa  in the past and now craving to eat them now. This time. I choose red onion to be stuffed in my samosa.

Make my Mini Onion Samosa smaller than the regular ones, it was just nice for one bite.  Feel free to vary the size by dividing the dough into lesser balls for bigger samosa.  Also used a combination of plain flour and whole wheat flour  that yield a slightly darker shade than  the normal samosa.

The onion stuffing was seasoned with chili powder to add some punch  but you can decrease of increase according to your tolerance.

As you know. regular samosas are deep fried but I prefer to shallow fry them.  This does not effect the taste of this Mini Onion Samosa at all, they are still turned awesome.

Come, enjoy these bite sized beauties  with a cup of your favorite drink.

BAKED EGGLESS CHURROS RECIPE

Am reluctant to try out this Baked Eggless Churros recipe for the reason, I don't have star nozzle to pipe the dough. That all change when I saw my friend made it with daisy cookies (biskut semperit) mould.

This really encourage me to start making it.  The downside of using this method, you can only pipe a shorter ones but that was okay for me.

Tried a baked version instead of deep frying.  Whipped up a simple chocolate sauce to go along with Baked Eggless Churros.

I must say, they are perfect pairing, made me forget about my diet. In case you don't have evaporated milk, replace it with fresh cream. Strain the chocolate sauce if you are not sifting the cocoa powder for a smooth sauce without any lumps.

Healthy Banana Bundt Bread  was made without oil or butter but still so moist and delicious.

If you're a regular visitor of my blog, you would notice, I have baked more than a dozen of banana cake/bread with slight variation on the ingredients used.

Stumbled upon this recipe while browsing Facebook.  Am eager to try it out since it uses yogurt and eggs to moisten the batter.

The original recipe uses 1/3 cup of honey but I have replaced it with half a cup of brown sugar.  This amount is just perfect for us. You can add more if you like it sweeter.

Am so glad, Healthy Banana Bundt Bread turned out incredibly fluffy and moist,   Less then 24 hours, it was almost gone, my family really love this bread.

BRAIDED BREAD RINGS RECIPE

These rolls are made with sweet bread dough, shape into  long rope of 12 in folded into 2 and braided,

After browsing You Tube, I came across a bunch of gorgeous rolls with different braiding techniques. They used no special gadget but simply turning the dough by braiding and twisting. I borrow that idea to shape my Braided Bread Rings.

I was pleasantly surprised to see, how easy to turn your dough into something beautiful by looking at those videos.

For the dough, I used my trusted  Braided Masala Bread recipe or use your favorite bread recipe.   If sticky, do not be afraid to add a bit more flour.

Sometimes Braided Bread Rings do become a little squished but overall the results  are simply stunning.

This simple chocolate cake is totally made without  milk, eggs or butter and no mixer is needed.  .

You would be surprised that this Eggless Chocolate Cake 2 turned out deeply flavored, moist and fluffy.

It all started by bringing  water, oil, sugar. cocoa power  to a boil. Allow to cool a bit then add the rest of the ingredients.

Eggless Chocolate Cake 2 was an excellent choice for those with dietary restrictions. It  was such a winner!  I felt no need for icing the cake but this is entirely up to you.

A combination of cornflakes and dried fruits makes these bars a wonderful treat.

It has been awhile I made breakfast bars.   Since my cornflakes are sitting idly in the cupboard. it is the right time to turn them into a delicious grab and go slices.

These  Fruit Cornflakes Bars  are so versatile, there are so many variations you can made from it.  Either add  fresh or dried fruit when mixing them,  I used  1 cup dried grapes and  1/4 cup of fresh blueberries or use a total of one and quarter  cup of fruit you have in hand..   You can even add chopped nuts like almond, walnut or pecan too.

IRISH BARMBRACK RECIPE

A yeast free Irish tea bread (barmbrack), studded with dried fruit that was soaked in tea overnight or at least 4 hours.

A popular Irish  bread normally baked using yeast.  Today I tried a yeast free version. Used dried cranberries, apricot and sultana that have been soaked for 4 hours.

This Irish Barmbrack is uncomplicated to make if you plan properly.  It requires you to soak the dried fruit in black tea overnight in a refrigerator, the rest was just mix  and stir.

You can soak the fruits in any type of tea you like other than black tea.  Also this bread does not require extra brown/white sugar either as it is naturally sweetened by the dried fruits.

Irish Barmbrack is easily adapted to be a vegan recipe if you replace some of the ingredients :

whole milk  ------>   non dairy milk
1 egg           ------>   60 g mashed banana or mashed potato

Barmbrack is also eaten year round as a delicious treat at teatime when it is served with salty butter, a few days old brack  is also lovely toasted.

TANGZHONG SWEET BUNS RECIPE

A soft and fluffy sweet buns recipe using water roux (tangzhong) method.

Tangzhong Sweet Buns  is a basic recipe that can be transformed into honeycomb buns, pull apart bread, chocolate, cinnamon rolls or stuffed with either sweet or savory filling.

Before proceeding to bake this bread, prepare the tangzhong.  You need to cool the water roux before adding it to the dough.

These buns need to rise twice, one after kneading into smooth ball and immediately after shaping them.

If you intend to turn into honeycomb buns,  shape into a tiny ball and stuff with sweet or savory filling.  Place these balls in a concentric circles.  After baking, pour sugar syrup or butterscotch sauce on top if you're using a sweet filling.

As for cinnamon rolls, roll out the dough into a rectangle,  spread with butter, sprinkle with cinnamon brown sugar mixture evenly over the dough, leaving 1/2 in border all around,  roll up and cut into 1 in thick slices.

Tangzhong Sweet Buns  turned out fantastic, remarkably soft  and very flavorful.   Importantly the dough is also very manageable, very nice dough to work with.

BINGKA ROTI (HOMEMADE BREAD PUDDING)

Bingka Roti - A baked dessert using bread slices, eggs, milk and plain flour that was firmer and easy to slice.

I have a few slices of stale bread lying on the counter.  To rescue those bread  am making a bread pudding or Bingka Roti.

This Bingka Roti was slightly different from my earlier bread pudding recipe. as it was firmer and easy to slice due to addition of plain flour.

You can choose other add ins such as sweet corn, jack fruit or banana.   Also  instead of milk, opt for coconut milk instead.

CLASSIC BREAD PUDDING

This Classic Bread Pudding is an easy dessert using a stale bread soaked in a milky egg mixture.

I used to make it using my white sandwich  bread, crust removed then cubed, but today I made this Classic Bread Pudding with multi grain bread, cut the slice into half length wise.

Also baked this pudding in my  9 x 11 in  baking pan instead of the heavy glass dish.  It does not matter what utensil you choose, it still turns out great.  The advantage of using a glass dish is that it can go from oven straight to dining table.

It can be customize to your liking by adding cinnamon, nutmeg or lemon zest.  If you are a chocolate lover, add a cup of  chopped bittersweet chocolate or add in fruits like banana (2),  blueberry, strawberry, raspberry (2 cup) or dried fruit (1 cup) just before baking.

This simple  Classic Bread Pudding came out beautiful and and  taste exactly the same  I enjoyed as a child.

This classic Flat Top Banana Bread is always a favorite, whenever I have over ripen banana,  this is the bread I used to make.

It uses one and half cup of mashed banana, yogurt and butter to produce a moist and divine banana bread.  It took 50 minutes to bake it at 180 C.

Easily turned this basic banana bread to the next level by adding chocolate chips, peanut butter, coconut or blueberry.  So, if you're craving for a sweet, warm and super easy treat,  this Flat Top Banana Bread is the best option.

As this bread was extremely moist, place the bread  in an airtight plastic container then store in a refrigerator after 24 hours

VEGAN HOMEMADE DOUGHNUTS

A vegan and yeast free doughnuts for our tea time treat this week.   Found this recipe on Facebook.  It looks easy and quick to make.

These Vegan Homemade Doughnuts use vegan margarine and soy milk without yeast.   If you're not a vegan, you can use butter and fresh milk.

Original recipe calls for deep frying but I opt for baking instead.  Also did not coat them with sugar as we wanted a savory version.

The dough of these  Vegan Homemade Doughnuts are really sticky,  I added a tablespoon of flour to make it easier to shape by forming the dough into a ball, flatten it and make a hole with your floured finger or else roll the dough and use a doughnut cutter.

The doughnuts turned out very tasty despite they don't rise much as compared with  deep fried ones.  I think we need to add another teaspoon of baking powder if it is baked (original uses 1 teaspoon).

VARIATIONS

Liquid can be replaced for fruit juice, you can even add chopped dried fruit.

For savory bread, add tomato juice instead of soy milk,  sun dried tomato may be added to the dough

Brush the dough with olive oil, sprinkle with sea salt  and oregano for foccacia flavor.

FANTASTIC APRICOT BREAD

Always love quick bread for breakfast or in between snack.   This week  tried my hand baking this Fantastic Apricot Bread.

This bread can be baked with yeast but am not in the mood to knead or spend time  waiting for it to rise.   So chosen this fruit laden quick bread.

Before you start, chopped dry apricot into small pieces but fairly visible.  Soak them in water for good 30 minutes. Squeeze out the water. keep aside.

This Fantastic Apricot Bread was really sweet so it doesn't need any glaze at all.  Have seen a few recipes with less sugar but uses  glaze after it has been baked.  Which one do you prefer, less sugar with glaze or without?

This bread received  high marks from my family, we are expecting some guest for  couple of days, have planned to bake it again.
